The Easy Vegan: Crispy Roasted Potatoes

There's nothing like potatoes for comfort food - the best part is they can be made quickly, cheaply and easily!! 

Produce

  • 1/4 tsp Garlic powder
  • 2 tsp Parsley, dried
  • 2 lbs Yellow Potatoes, peeled or unpeeled, cut into 1/2 inch pieces

Baking & Spices

  • 1/4 tsp Black pepper, freshly ground
  • 1 tsp Paprika
  • 1/2 tsp Salt

Produce

  • 1/4 tsp Garlic powder
  • 2 tsp Parsley, dried

  • 1/4 tsp Black pepper, freshly ground
  • 1 tsp Paprika
  • 1/2 tsp Salt

Oils & Vinegars

  • 2 tbsp Olive oil
  • 2 tbsp Non-dairy Butter

 

  1. Preheat oven to 425°F. Place potatoes in a 9 x 13 pan.
  2. Pour melted non-dairy butter and olive oil over potatoes and add the remaining ingredients. Stir until potatoes are evenly coated.
  3. Place in oven and and bake, stirring every 15 minutes (so they evenly crisp and don't stick to pan), until potatoes are tender and starting to brown in spots and get crispy. This will take about 45-55 min.
